Nicole Derseweh is a vegan chef and You Tube ingenue who educates the populace on the merits of plant-based cuisine. She has culinary training from Le Cordon Bleu and comes from a long line of chefs. How did you find your way into the historically male-dominate culinary industry?
I followed my Southern grandmother who’s been kicking butt and taking names since the 1930’s.
What has been a defining moment in your culinary career?
Feeding the homeless vegan burritos on the streets of Venice and having a homeless teen look me in the eyes and say thank you. I was humbled.
Which ladies serve up culinary inspiration in your life?
Honestly, my grandmother Martha Ann. She raised me on farm to table cuisine and never served a salad that wasn’t hand tossed. She’d say, “How else are you supposed to get the love into it!?” Her intimate connection with her dishes from harvest to plating has always stuck with me.
What advice do you have for other women trying to build culinary careers?
Don’t push. Know your power as a woman. There is so much strength in your femininity.
