The first in this exclusive #carpedinner series is Pasadena-based chef Bruce Kalman. Kalman is the perfect chef to kick off this collaboration, as his experiences with PEPCID® go way back. He says, “As a chef, I have to taste food all day — a lot of fats, acid, and spice. It’s not optional for me to taste.” He relies on PEPCID® to act fact and last to keep his reflux and heartburn symptoms at bay and allowing him to keep tasting, creating, and putting out the delicious food he’s known for.

About The Chef

Chef Bruce Kalman began cooking at a family friend’s pizzeria in his hometown of Paramus, New Jersey. After attending a local culinary school, he worked at a variety of restaurants across the country. From Ava Cafe in New York and Spiaggia in Chicago to Il Piatto in Santa Fe and Chelsea’s Kitchen in Phoenix, Kalman honed his talents and his dedication to simple foods prepared in the best way. His northern Italian cuisine since has been characterized by root-to-leaf and nose-to-tail cooking, farm-fresh ingredients, and a down-to-earth approach.

Kalman moved to Los Angeles in 2011 to help open Misfits, which was known for his farmers market-driven fare and Italian-Mediterranean flavors. He later became the Executive Chef at Churchill in West Hollywood, wowing with his handmade charcuterie, pickles, and fresh pastas. Three years later, he opened Union in Pasadena, where the porchetta sells out and the chalkboard walls are covered with Alice Waters quotes. Upon its inception, Union received high praise from LA Times food critic Jonathan Gold, who touted the restaurant’s “touch of Italian soul” nothing to take for granted. Union has also garnered a spot on Gold’s “101 Best Restaurants in Los Angeles” list. Kalman’s achievements at Union also earned him a James Beard Award nomination for “Rising Star Chef.” He and partner Marie Petulla have recently added Knead & Co. Pasta Company and Market to their lineup.

In addition to Kalman’s experiences on the line and his professional accolades, he has also made a number of television appearances. Beyond cooking, Kalman is passionate about music. He is the frontman of a band called Foie Grock with fellow chef and television personality Duff Goldman.
