Vegan Apple Chimi Cheesecake Handpies

This dessert is a creative take on some beloved and well-known dishes: apple pie, cheesecake, and chimichangas. This recipe for vegan apple chimi cheesecake handpies are small pockets of deliciousness that also just happen to be raw. Want to make them more like traditional chimichangas? Recipe: Vegan Apple Chimi Cheesecake Handpies by Chef Salimatu

Ingredients
Dough:
  • 2 cups walnuts
  • 2 cups almond flour
  • 1/2 cup maple syrup (or sweetener of your choice)
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • pinch of nutmeg
Apple Pie Filling:
  • 2 apples
  • 1/4 cup maple syrup (or sweetener of your choice)
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
Cheesecake Filling:
  • 1 cup raw cashews, soaked overnight
  • 4 tablespoons maple syrup (or sweetener of your choice)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons coconut oil, melted
  • 1/4 teaspoon vanilla extract
  • salt to taste

Vegan Apple Cheesecake Handpies

Steps & Assembly
Make the dough:
  1. Grind the walnuts into small pieces using a food processor or blender.
  2. Transfer to a bowl and mix in almond flour, maple syrup (or choice sweetener), vanilla, salt, and nutmeg.
  3. Place the dough in the refrigerator.
Make the apple pie filling:
  1. Slice the apples into small, thin pieces and put into a bowl.
  2. To the apples, add maple syrup (or choice sweetener), lemon juice, cinnamon, and vanilla.
Make the cheesecake filling:
  1. Strain and rinse the soaked cashews.
  2. Blend the cashews with the coconut oil, maple syrup (or choice sweetener), lemon juice, vanilla, and salt until creamy.
  3. Place mixture in the freezer.
Assemble the apple pockets:
  1. Remove the dough from the refrigerator.
  2. Using a rolling pin, roll the dough between two sheets of wax paper until about 1/4 inch thick.
  3. Use a cooker cutter or jar lid to cut dough into rounds. Continue until all dough has been made into rounds.
  4. To one half of each round, add a spoonful of apple pie filling and a spoonful of cheesecake filling.
  5. Fold the dough in half over the fillings, creating a pocket shape. Make sure the edges line up.
  6. Use a fork to press the edges together. Serve and enjoy!
